In this video we cook up eggplant involtini. Healthy meals, for veg and those on a keto diet. Super healthy and easy to make. Just follow the directions below.
Slice eggplant: Lay each peeled eggplant on its side and slice it lengthwise into 1/2 inch thick planks
Bake Slices: Brush both sides of eggplant with oil, season with salt and peper, and bake until tender, (30-40 min)
Stuff and Roll: With the widest end facing you, place portion of ricotta mixture on bottom third of slice. Roll into cylinder, then place seam side down in skillet.
Simmer and Broil: Simmer sauce for 5 minutes Transfer skillet to oven and broil until eggplant is well browned and cheese is heated through, 5-10 minutes.
